Pecan Pie Brownies

Can we just take a minute to acknowledge how excluded chocolate is from most Thanksgiving menus, and many autumnal recipes in general?

Leave it to Broma Bakery, in all of her infinite genius, to develop a solution. These brownies combine the best of a classic Thanksgiving favorite with a beloved dessert of chocolate-lovers everywhere, and are sure to be a hit at Thanksgiving (or Friendsgiving!) celebrations anywhere.

These Pecan Pie Brownies are a delightful combination of two favorite desserts that go together perfectly. The brownie layer is rich and fudgy, providing a soft, dense chocolatey base. On top of this, you’ll find a generous layer of sweet, nutty, and gooey pecan pie filling. The blend of the two creates a delicious mix of flavors and textures that’s simply amazing.

Best of all, they’re super easy to make. Simply follow the instructions on the brownie mix box for the base layer, and prepare the pecan pie filling while it bakes halfway to completion. Layer the pecan filling on top of the half-baked brownies, pop them back in the oven, and in no time, you’ll have a mouthwatering treat ready for the Thanksgiving table. Ingredients

  • 1 boxed brownie mix, prepared according to the directions
  • 1/2 cup honey
  • 1/2 cup light brown sugar
  • 1 egg
  • 1 tablespoon butter, melted
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 3/4 cups chopped pecans (roasted and salted preferred)

Instructions

  1. Preheat the oven to 350°F and line a 9 x 9 pan with parchment paper on all sides. Set aside.
  2. Prepare the brownie mix according to directions on the box. Pour the brownies into the prepared pan, using a rubber spatula to spread the batter evenly to the sides.
  3. Bake the brownies for 15 minutes. After 15 minutes, take the brownies out of the oven. They will still be raw, but set enough to hold up the pecan pie layer.
  4. While the brownies are baking, make your pecan pie filling. In a medium bowl, whisk together the honey, brown sugar, eggs, butter, salt, and vanilla extract. Fold in the pecans. Set aside.
  5. Once the brownies are somewhat cool, pour the pecan pie filling over the brownie layer, using a spatula to gently spread the filling out evenly without pressing it too far into the brownie layer.
  6. Return the brownies to the oven for another 20 minutes or until a knife inserted into the middle comes out mostly clean.
  7. Allow to cool completely to room temperature to set before slicing into 16 brownies. Enjoy!
