Fro-Yo To-Go (Frozen Yogurt Bark)

I love frozen yogurt.

Like, really love it. I’m talking drive-to-YogurtLand-in-the-middle-of-a-rainstorm-because-I-have-a-craving love it. The kind of love that has also led me to DoorDash it to my home, despite how completely impractical it is to have frozen dessert delivered.

And all that DoorDashing has taught me that frozen yogurt doesn’t always travel well – until now. Meet frozen yogurt bark a.k.a. Fro-Yo To-Go.

Is this a necessary invention? Absolutely not. Practical? Nope. Delicious? Hell yeah, it is.

You’ll need a small tray or quarter baking sheet to freeze your bark, but if your freezer is large enough to accommodate a full-size baking sheet, the more bark, the merrier.

The topping possibilities are truly endless and entirely up to you. Here’s what went into mine:

  • First, you need your flavor swirls. I dropped dollops of strawberry preserves and guava jelly onto my tray, then swirled them with a toothpick. Jam, preserves, nut butter, melted chocolate, Nutella or any spread would all be delicious, too.
  • Good things happen when sweet, crunchy cereal meets tart frozen yogurt; I’m a big fan of Fruity Pebbles on fro-yo. Maybe try Cinnamon Toast Crunch, Cocoa Puffs or Trix instead.
  • Fresh fruit is a must. I chopped up some mango and sprinkled handfuls of juicy blackberries throughout. Strawberries, blueberries, pineapple or cherries are just a few others you could try.
  • We needed some nutty sweetness in the mix, so I toasted coconut and added that as well. Mochi is another of my go-to toppings with just the right subtle sweetness, and I bet graham cracker crumbs, nuts or granola would also balance beautifully.

Fro-Yo To-Go (Frozen Yogurt Bark)

Ingredients

  • 3 cups unsweetened yogurt (any kind, including dairy-free options), but for creamiest texture, go for a full-fat strained yogurt (like Greek or Skyr)
  • 2 Tbsp. liquid sweetener (honey, agave syrup, maple syrup, etc.)
  • Toppings, to taste:
    • Swirls: jelly, preserves, fruit puree, nut butters, melted chocolate, Nutella or any other spread
    • Sprinkles: fruit, cereal, chocolate chips, cookie crumbs, candy…the list goes on!

Instructions

  • Stir 2 Tbsp. sweetener into 3 cups of yogurt.
  • Spread the yogurt onto a baking sheet lined with tin foil or parchment paper.
  • Swirl or sprinkle toppings as desired. For a marbled effect, drop dollops of your chosen “swirl,” then drag a toothpick through to swirl.
  • Freeze until solid, at least 3 hours.
  • Break the bark into pieces and eat immediately.

Notes

Kept in an airtight container, the bark will keep for up to 3 months.
